An aromatic chilli oil infused with the intense flavours of salted black beans, Bill Poon made this originally for friends and family who sent empty jam jars to be filled. Bottled at the instigation of Helen Goh from Ottolenghi who tasted one of Bill Poon’s jars, it has become a favourite of many foodies.

Unusual in that it uses salted black beans, Poon’s Extraordinary Chilli Oil has a depth and intensity beyond just heat.

Drizzle over: Noodles, rice, dumplings, dim sum, fried eggs, pizza, roasted vegetables.

Stir into: hummus, pasta, sauces, marinades, salad dressings, stir-fries.

How To Use

It can be used as an ingredient to spice up home cooking or served as a condiment.

Amy recommends stirring it through thick wheat noodles, wet still from the noodle water, for a Chinese take on spaghetti aglio e olio.

Spoon it over fried eggs, dumplings, rice and steamed greens. Stir it into hummus, mayonnaise and salad dressings, or use it in a marinade for chicken or prawns.

More Information

Most chilli oils are built around heat. Ours is built around salted black beans, which give it a savoury depth that carries the chilli rather than the other way round. It is warming rather than fiery. It is not a chilli crisp either. Chilli crisp is mostly fried chilli, garlic and shallot, made for crunch; Poon's is an oil first, made to be spooned over and stirred through.
